Ingredients
Apple Butter Bourbon Marinade:
1/3 cup apple butter
1/2 cup apple juice
2 tablespoons brown sugar
1/2 cup bourbon
2 teaspoons worcestershire sauce
1 teaspoon salt
Pork Tenderloin
One 1 lb pork tenderloin
Fall Veggies for the side:
1 lb brussel sprouts, halved
1 medium/largesweet potato, diced
1/2 onion, sliced
1 apple, sliced
salt and pepper to taste
Instructions
Combine the marinade ingredients, until sugar is fully dissolved.
Pour the marinade over the pork tenderloin in a ziploc bag. Soak in the fridge overnight (or for a few hours if short on time).
When you are ready to cook, grill the pork until it reaches an internal temperature of 165F. Do not discard the leftover marinade.
In a greased baking dish, chop and combine all of your veggies, and then spray with cooking spray. Season with salt and pepper to taste (add some red pepper flakes for a kick!). Then pour the remaining marinade over the veggies, and stir to coat evenly.
Bake at 350F uncovered for 15 minutes, then remove from the oven, stir again, and cover the baking dish and cook for an additional 15 minutes. Most of the marinade should be absorbed and the sweet potatoes should be soft enough to stick a fork through, then you know you are done.
Slice the meat and serve with the veggies.
